SEAFOOD BATTER | |
2 egg yolks, beaten 1 cup milk 2 tablespoons butter 1 cup all-purpose flour 2 egg whites, stiffly beaten 1/2 teaspoon salt pinch each garlic and onion powder (optional) Separate eggs (yolks from whites) into 2 small bowls. In a medium bowl, beat egg yolks with 1/2 cup milk. Add melted butter. Whisk together salt, flour and garlic/onion powder (if using) until well combined. Beat into egg-milk mixture until smooth. Add the remaining half cup of milk to the batter; stir well. Fold in stiffly beaten egg whites. Adjust batter: If mixture seems too thin, add more flour, if too thick, add more milk.
