ERNIE'S FAVORITE CASSEROLE 
2 lb. cubed lean pork shoulder
6 lg. pieces celery, cut up
1 sm. or 1/2 lg. green pepper, cut up
1 pkg. medium noodles
1 can cream style corn
1 can Campbell's chicken rice soup
1 sm. can mushrooms

Cook noodles as per package directions and drain. Put lump of butter or shortening in saucepan and add meat. Brown meat and then add water to cover and simmer. While meat is simmering, add celery, green pepper, and mushrooms. Simmer until meat is soft and vegetables cooked. Check after 10-15 minutes. Butter casserole, place a layer of noodles, then a layer of meat mixture, then a layer of corn and pour part of soup over mixture. Repeat until all ingredients are used. Put cracker or bread crumbs on top and dot with butter. Bake in 350 degree oven for 1 hour. Serves 8.
