COLD CUCUMBER SOUP 
1 cucumber
1 c. plain yogurt
1 tbsp. lemon juice
1/8 tsp. dill weed
1/8 tsp. garlic powder
Salt
Pepper
1 tbsp. minced chive, parsley or mint (optional)

1. Peel cucumber; quarter it lengthwise. Remove and discard seeds. Cut cucumber into chunks. 2. Combine in blender with remaining ingredients; blend until smooth. 3. Serve in chilled bowls. Garnish with thin, unpeeled slices of cucumber and minced chive, parsley or mint. Serves 2.
