HAM & SPINACH QUICHE 
1 unbaked 9 inch pie shell
1 (10 oz.) pkg. chopped spinach (or broccoli)
1 c. julienne strips of ham (or chicken)
1 c. grated Swiss cheese
4 lg. eggs
1/4 tsp. salt
1/8 tsp. pepper
1 c. half and half
1/2 c. milk

Heat oven to 450 degrees. Poke inside of pastry shell with fork and bake 7 minutes. Let cool. Turn oven to 350 degrees. Cook spinach and drain well. Arrange spinach at bottom of shell. Top with ham and cheese (or variations). Beat eggs lightly and mix in rest of ingredients. Pour lightly into shell. Bake 45 minutes or until knife inserted in middle comes out clean.
