CARROT CASSEROLE 
1 1/2 lb. carrots
1/4 tsp. salt
2 sticks butter
3 eggs
1/4 tsp. cinnamon
1/2 tsp. baking powder
1 1/2 c. sugar
1/2 c. plain flour

Cook carrots until done; drain. Place all ingredients in blender or food processor and incorporate all together. Spray 9 x 13-inch baking dish and bake casserole until set and lightly brown at 350°F (approximately 45 minutes). Sprinkle with sugar.
