EASY COCKTAIL QUICHE 
3 eggs
1 lb. cottage cheese
1 tbsp. sour cream
4 oz. grated sharp cheddar cheese
4 tbsp. melted butter
1/4 tsp. salt
Pepper to taste
1/2 c. Bisquick

Stir until just mixed. Bake in small muffin tins 375 degrees for 25-30 minutes. Fill muffin tins 7/8 full. Can be frozen and used when needed. Really good!

Recipe does not say to spray muffin tins before baking. I made the first batch with a non stick pan and only 4 came out clean. The rest stuck to the tin. They taste wonderful but they were a mess without spraying pan and I would not be able to serve to my guests.
