DEEP DISH APPLE PIE 
10 med. size apples (Mcintosh or Granny Smith), sliced, about 10 cups
1/3 c. granulated sugar
1/3 c. firmly packed light brown sugar
3 tbsp. flour
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground allspice
2 tbsp. butter
Water
1 tbsp. granulated sugar

Combine apples, brown sugar, and 1/3 cup of granulated sugar, flour, cinnamon, cloves, and allspice in a large bowl; toss lightly to mix. Let stand while making pie crust.

Preheat oven to 425 degrees. Place pie crust in a deep pie plate. Spoon apple mixture into the pie plate and dot with butter. Cover with pie crust. Fold edges of crust under, flush with sides of dish. Pastry should be inside dish.

Brush lightly with water. Sprinkle with remaining 1 tablespoon of sugar. Bake in a preheated oven at 425 degrees for 45 minutes or until pastry is golden and juices bubble up. Place a piece of aluminum foil on the rack under the pie to catch any juices that may run over. Serve with vanilla ice cream.
