TACO SEASONING MIX 
2 tsp. instant minced onion
1 tsp. salt
1 tsp. chili powder
1/2 tsp. corn starch
1/2 tsp. crushed dried red pepper
1/4 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. instant minced garlic

Combine all ingredients, seal and store.

TACO FILLING:

1 lb. ground beef
1/2 c. water
1 pkg. Taco Seasoning Mix

Brown beef, drain off excess grease. Add water and seasoning mix. Reduce heat and simmer 10 minutes. Stir occasionally. Makes filling for 8 to 10 tacos.

I've been using this recipe for years with the following exceptions: I turn the tsps. to tbsp.; I only use half the crushed red chilies; since I've been on a low sodium diet for almost 35 years, I use an extra tbsp. of chili powder in place of the tbsp of salt (I have access to New Mexico chili powder which gives it a more medium flavor). By replacing the teaspoons with tablespoons, I make 3 packages of seasoning at one time. For 1 lb. of ground beef, dissolve 2 tablespoons of seasoning in 1/2 cup of water. By doing this, the cornstarch doesn't clump as much. Try using taco meat with a big box of mac & cheese!
