DUTCH LETTUCE | |
1 lb. lean salt pork, cut in 1/2 inch cubes 8 lg. potatoes, peeled, boiled 1 head lettuce, or fresh leaf lettuce 6 hard boiled eggs 2 tbsp. cider vinegar 1 c. water Boil potatoes; drain and mash coarse. Cut pork into 1/2 inch pieces, fry until crisp. Take out and put on cut up lettuce, add cut up eggs and potatoes. In the pork drippings, drain off half the lard; add water and vinegar to pan and bring to a boil. Pour over the lettuce, pork, eggs and potatoes. Mix together. More vinegar can be added if desired. |
