MACARONI AND CHEESE 
1 1/4 lb. macaroni
1 1/2 lb. Cheddar cheese
1/4 lb. butter
1/4 lb. flour
1 tbsp. salt
1 1/2 qt. milk

Heat milk in double boiler. In saucepan melt butter, add flour and salt. Stir until smooth. Add small amount of hot milk, a little at a time, stirring constantly. Stir until consistency to transfer to double boiler and stir in grated cheese, stirring constantly. Cook macaroni in boiling salted water. Combine macaroni and sauce in shallow pan. Bake in 19 1/2 x 11 1/2 x 2 1/2 inch covered pan at 350 degrees for 1 to 1 1/2 hours. Serves 25.
