6 med. tomatoes, sliced
1 med. onion, sliced
2 tbsp. butter
2 eggs
1/2 c. cream
1 c. grated Monterey Jack or Cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper

In skillet, saute onions in butter until tender. Place tomatoes in 10 inch baking dish and cover with onions. Sprinkle with salt and pepper. Beat eggs and cream together. Pour over onions. Bake at 350 degrees for 30 minutes. Sprinkle with cheese and return to oven for 15 minutes.
