STUFFED SWEET POTATOES 
4 med. baked sweet potatoes
1/4 to 1/3 c. milk (as needed)
1/4 c. peanut butter
1/4 tsp. salt
1 tbsp. butter
1/3 c. chopped (salted) peanuts

Cut hot baked sweet potatoes in half and remove shells. Mash thoroughly. Add milk, peanut butter, butter and salt. Beat until fluffy and refill shells. Sprinkle with chopped peanuts and brown on baking sheet at 425 degrees.
