APPLE DAPPLE CAKE 
1 1/2 c. cooking oil
3 eggs (3/4 c. Egg Beaters or whites of 6 eggs)
2 c. sugar
3 c. flour (whole wheat flour or oat bran can be substituted for 1 c. flour)
1 c. raisins
1 c. nuts
1 c. coconut (for low cholesterol, use coconut flavoring, 1 1/2 tsp.)
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
3 c. raw apples, chopped

TOPPING:

1 c. water
2 c. brown sugar
1 stick butter

Mix together all ingredients. Pour into a mold pan and bake at 350 degrees for 1 hour and 15 minutes or longer if needed. Leave cake in pan. Pour topping over cake.

Topping: Bring all ingredients to a boil and boil 2 minutes. Pour over cake. Let set until cool before removing from pan.
