VIOLETTE FAMILY HOMEMADE
BARBEQUE SAUCE

3 lg. onions, chopped
1 tablespoon butter or olive oil
1 qt. ketchup
2/3 cup concentrated lemon juice
1/2 cup vinegar
5 oz. Worcestershire sauce (about 1/2 bottle)
1/2 tsp. salt
1/4 tsp. cayenne pepper (crushed red pepper)
2 tbsp. mustard
1/2 c. brown sugar, packed

In a skillet, sauté chopped onions in melted butter or olive oil until tender. Remove from skillet and place in 4 quart saucepan. Add remaining ingredients, simmer on low-medium heat for about 1 hour, stirring often. Do not allow to stick or burn.

Great homemade barbeque sauce to cook on top of pork ribs, or to add cooked pork shoulder roast meat to make pulled pork barbecue.

For pulled pork barbeque, roast pork shoulder roast in oven at 325°F degrees for approximately 20 min per pound.

Let meat cool. Pull pork meat from bone and fat, chop into bite-sized pieces, if necessary.

Place meat into homemade barbeque sauce, and simmer on low heat for about 1 additional hour.

Makes great sandwiches on hamburger rolls.

Top with homemade coleslaw for extra crunch.
