TAHINI-GARLIC DRESSING 
A robust garlic dressing with a nutty, sesame taste. This strongly-flavored dressing is at its best on a very simple salad of one lettuce, such as romaine or buttercrunch.

1/2 c. tahini
2 tbsp. vegetable oil
1/4 c. fresh lemon juice
1/2 c. water
1 tsp. cider vinegar
2 tsp. tamari soy sauce
1 or 2 garlic cloves, pressed
1/8 tsp. black pepper

Place all the ingredients in a blender or food processor and blend thoroughly. Yields 1 1/2 cups.
