DADDY'S SHRIMP CREOLE | |
1/2 c. vegetable oil 2 c. onions, chopped 2 tbsp. minced garlic 2 c. whole tomatoes 1 tbsp. paprika 1/4 tsp. cayenne 1 tsp. salt 1 tsp. white pepper 1 tbsp. cornstarch 2 lbs. med. shrimp, peeled & deveined 1 bay leaf Heat vegetable oil and saute the first 4 ingredients just until tender. Add tomatoes, cook 1 minute more. Stir in paprika, cayenne, salt, pepper, water, bay leaf. Simmer for 15 minutes. Add shrimp, continue for an additional 10 minutes. Thicken with cornstarch mixed with 3 tablespoons cold water. Serve with steamed white rice. Serves 8 to 10. |
