GENA'S CREOLE SHRIMP 
1/2 c. chopped green pepper
1/2 c. chopped celery
4 green onions, thinly sliced
1 clove garlic, minced
2 tbsp. butter
1 (16 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. Creole seasoning (or to taste)
1 1/2 lbs. shelled and deveined shrimp
Hot cooked rice

Saute first 4 ingredients in butter. Add tomatoes, tomato sauce, tomato paste, and seasoning. Simmer 30 minutes. Add shrimp and continue cooking until shrimp are done, about 15 minutes. Serve over hot rice. Serves 4-6 generously.
