QUICK & EASY CHICKEN & SAUSAGE
GUMBO
 
1 lb. smoked sausage, sliced (I use Hillshire farms)
2 boneless, skinless chicken breasts, cubed
1 tbsp. olive oil
2 celery stalks, diced
1 (28 oz.) can diced tomatoes with peppers and onions (Furmano's)
1 (16 oz.) bag frozen chopped okra
2 (15 oz. ea.) cans fat-free chicken broth (Swanson)
Old Bay seasoning. to taste
3 cups cooked rice or 1 1/2 cups instant rice (optional)

In oil, cook chicken; add sausage to brown. Add celery. Once meat is cooked and all other ingredients but rice. Let simmer about 20 minutes. if you wish to add rice, do so now. Cover and cook additional 20 minutes.
