SQUASH CASSEROLE 
2 pkg. frozen sliced yellow squash
1 egg
1/2 chopped onion
1/2 c. milk
1 c. crushed Ritz crackers
1 tsp. salt

Cook squash and onion until tender. Drain off most of liquid. Add all other ingredients and mix well. Put in a casserole dish and top with extra cracker crumbs and cheese. Bake at 400 degrees for 30 minutes or until golden brown.

Really loved this! I had some chopped summer squash in the freezer so, I cooked it in a steamer basket in a saucepan, with frozen chopped onion, mixed the other ingredients in a separate bowl, added the squash/onion combo and followed recipe and it turned out great!!! We ate almost all of it at supper tonight--I even sneaked some out of the fridge an half hour later because I liked it so well! :-D
