SQUASH CASSEROLE 
3 c. winter squash (I use 2 boxes frozen squash)
3 eggs
1 1/2 c. cracker crumbs
1 1/2 c. chopped onions
1 (13 oz.) can evaporated milk
1 1/2 tsp. salt
3/4 tsp. pepper
5 tbsp. butter

Mix above and place in oiled 2 1/2 quart casserole. Bake at 375 degrees for 40 to 45 minutes. If you like, top with grated cheese at the end of baking time and put back in the oven just long enough to melt cheese. This makes a large casserole so alot of times I cut the recipe in half.
