COCONUT CUSTARD PIE 
2 eggs, separated
1 c. sugar
2 c. milk
1 tbsp. cornstarch
1/4 tsp. salt
2 tbsp. melted butter
1 tsp. vanilla
1 c. shredded coconut

Beat egg yolks lightly, add sugar and 1 1/2 cups milk. Beat well. Add cornstarch which has been dissolved in 1/2 cup milk. Add salt, butter, vanilla and coconut. Lastly fold in stiffly beaten egg whites. Pour into unbaked 9 inch pie shell and bake about 35 minutes in 400 degree oven or until brown and set. Knife inserted in the center will come out clean when done.
