COCONUT CUSTARD PIE 
3 med. eggs (4 sm.) or use a container of Egg Beaters
3/4 to 1 c. sugar
1 1/2 c. milk (low-fat is fine)
2 tsp. vanilla
1 1/2 c. flaked coconut
Unbaked pastry shell

Beat eggs until frothy. Add remaining ingredients and pour into unbaked pastry shell in glass pie pan. Bake at 350 to 375 degrees about 1/2 hour or until top is nicely browned and crust is brown.
