EASY TWICE - BAKED POTATOES 
5 lg. potatoes
Milk
1/4 c. butter
1/4 c. sour cream
1/4 c. cottage cheese
1/2 c. grated cheese
Bacon bits
Chives, chopped
Salt & pepper

Boil potatoes until soft. Drain water. Beat and add milk until consistency of mashed potatoes. Add butter, sour cream, cottage cheese, salt and pepper. Place in greased casserole. Top with grated cheese. Sprinkle bacon bits and chopped chives over top. Bake at 325 degrees for 20 minutes (until cheese melts).
