TWICE BAKED POTATOES | |
3-6 lg. baking potatoes (need 1 potato for every 2 persons eating) 1 pkg. potato topping 1 sm. sour cream 1/4 c. grated cheese per baked potato Milk Butter Bake potatoes as normal. They are better in the oven. After baking, cut potatoes in half lengthwise. Carefully scoop out the insides. Save the shell to restuff. Mash the potatoes using milk and butter to make them creamy, not runny. Add sour cream to your taste or about 1 tablespoon per potato. Mix again, now add potato topping to season. Taste test to suit you. Re-stuff the potatoes, top with cheese. Put in oven. Bake at 400 degrees for 15 minutes or until cheese is melted. Serve with extra sour cream. |
