TWICE BAKED POTATOES | |
4 baking potatoes 1 (16 oz.) sour cream 1 stick butter, melted 1/2 c. chopped onions 8 slices bacon, crumbled Parsley to taste 1/2 tsp. pepper Salt to taste 1 c. Cheddar cheese 2 tbsp. vegetable oil Coat potato skins with vegetable oil and bake at 400 degrees for 1 to 1 1/2 hours unwrapped. Cut potatoes in half and scoop out warm pulp, leaving the skin as a shell. Add butter and sour cream to warm pulp until butter and sour cream is melted. Add remaining ingredients except cheese. Mixture should have texture of mashed potatoes and at this time should be taste tested for salt or added pepper. If texture is dry, add milk to moisten. Spoon mixture back into shell and bake an additional 15 minutes at 400 degrees. Remove from oven and top with Cheddar cheese. Return to oven until cheese is melted. Serve hot. |
