TACO SALAD (MICROWAVE) 
1 lb. ground beef or pork
1 (1 1/2 oz.) pkg. taco seasoning mix
1 (16 oz.) can kidney beans, undrained
1 med. head lettuce
2 lg. tomatoes, coarsely chopped
1/2 to 1 c. thinly sliced onion
1/2 to 1 c. thinly sliced green pepper
1 c. shredded Cheddar cheese
4 c. coarsely broken corn chips
1 (8 oz.) bottle Western style salad dressing

Place ground meat in microwave safe 2 quart casserole. Microwave high 5 minutes or until meat has lost it's pinkness, stirring halfway through cooking to break up meat. Add taco seasoning mix and undrained kidney beans. Microwave high 10 minutes, stirring 2 times during cooking. let stand about 10 minutes to cool slightly. Break lettuce into bite size pieces and place in large serving dish. Add tomatoes, onion, green pepper and cheese; toss lightly. Add meat mixture, corn chips, and salad dressing; toss. Serve immediately. Makes 6 to 8 servings as main dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
