SPINACH SALAD WITH CURRY
DRESSING
 
2 lbs. spinach
3 Delicious apples
2/3 c. dry roasted Spanish peanuts
1/2 c. raisins
1/3 c. thinly cut sliced green onions
2 tbsp. toasted sesame seeds

Trim and discard tough spinach stems. Rinse leaves well, pat dry and break into bite-size pieces. Wrap well and chill until serving time. Core and dice apples in salad bowl. Combine with other ingredients.

CURRY DRESSING:

1/2 c. white wine vinegar
2/3 c. salad oil
1 tbsp. finely chopped Major Grey Chutney
1 tsp. curry powder
1 tsp. salt
1 tsp. dry mustard
1/4 tsp. liquid hot pepper seasoning

Mix in a small jar or bowl. Shake or stir well. Let stand at room temperature for 2 hours to blend flavors.
