SPINACH-PEANUT SALAD WITH CURRY
DRESSING
 
4 oz. spinach
1/2 tart apple
1 tsp. lemon juice
1/4 c. dry roasted Spanish peanuts
2 tbsp. chopped green onion

DRESSING:

3 tbsp. oil
2 tbsp. white vinegar
1 tsp. finely minced chutney
1/4 tsp. curry powder
1/4 tsp. dry mustard
1 tsp. salt
2-3 drops hot pepper sauce

Wash and tear spinach into a bowl. Add the salad ingredients: apple, peanuts, lemon juice, and green onions. Whisk dressing ingredients until smooth. Pour over the salad and toss.
