ELENA'S GRILLED SALMON STEAKS 
Great recipe for early spring!

4 salmon steaks
1 onion, sliced 1/8-inch
1 tomato, sliced 1/4-inch
4 slices Swiss cheese (or enough to cover the top)
2 green onions, chopped
lemon juice
salt, to taste
aluminum foil (to make grilling packets)

Rinse salmon steaks in fresh water, pat to dry. Use aluminum foil large enough to wrap steaks.

Place 1 salmon steak in the middle of the foil. Sprinkle with lemon juice. Place tomato slice, then cheese slice, then top with onion slice. Sprinkle with chopped green onions. Season with salt. Wrap steaks in aluminum foil.

Place on grill low heat or 4 count with hand if using coals. Grill 6 to 8 minutes.

Serve with chopped green onions on the side.
