ZUCCHINI CASSEROLE 
1/2 c. shredded cheddar cheese
3 c. shredded zucchini
1 c. Bisquick
1/2 c. vegetable oil
1 tbsp. chopped parsley (opt.)
4 eggs

With a fork blend 4 eggs and add to the rest of the ingredients which have been mixed together. Salt and pepper to taste. Mix well. Place in greased 8"x8" pan or a pie pan and bake at 375 degrees for about 40 minutes until golden brown.
