MICROWAVE DIVINITY | |
2 1/4 c. sugar 1/2 c. water 1/2 c. light corn syrup 1/4 tsp. salt 1 c. coconut (optional) 2 egg whites 1 1/2 tsp. vanilla 1/2 c. pecans 1/2 c. candied cherries (optional) Mix together sugar, water, syrup and salt in 2 quart casserole dish. Loosely cover with lid or plastic. Microwave on High for 5 to 6 minutes or until boiling. Uncover and microwave on High 8 to 10 minutes or hard ball stage is reached. Meanwhile, beat egg whites until stiff. Slowly pour hot syrup over egg whites while beating with high speed mixer. Add vanilla and continue to beat for 4 to 5 minutes or until candy holds shape. Quickly drop teaspoonfuls onto waxed paper or pour into 10 x 6 x 2 inch baking dish. |
