SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
2/3 c. evaporated milk
1 c. sugar
1/4 c. butter
2 eggs, beaten
2 tsp. vanilla extract
1 sm. can crushed pineapple, drained

TOPPING:

1 c. brown sugar
1/3 c. flour
1/4 c. butter, melted
1/2 c. chopped pecans
1 c. flaked coconut

Beat first 7 ingredients together and pour into a greased 2 quart casserole.

Combine topping ingredients and mix until crumbly. Sprinkle over potatoes. Bake at 350 degrees for 30-40 minutes.
