SWEET POTATO CASSEROLE 
3 to 4 c. mashed, cooked sweet potatoes
1 to 1 1/2 c. sugar
3 eggs
1 tsp. vanilla
1 tsp. cinnamon
1/2 stick soft butter
1 c. flaked coconut
1 c. mini marshmallows
1 c. crushed pineapple

TOPPING:

1 c. brown sugar
1/2 c. flour
1 c. chopped nuts
1/3 c. soft butter

Mix potatoes, sugar, butter, vanilla, cinnamon and egg yolks. Stir in pineapple, coconut and marshmallows. Beat egg whites and fold into mixture. Pour into buttered 2 quart casserole dish.

TOPPING: Mix 1 cup brown sugar, 1/2 cup flour, 1 cup chopped nuts and 1/3 cup soft butter until crumbly. Sprinkle over top of potato mixture. Bake 35 minutes at 325 degrees.
