TOMATOES PROVENCAL | |
1 tbsp. minced garlic 1 tbsp. chopped fresh parsley 1 tbsp. dry bread crumbs 1/8 tsp. salt 1/8 tsp. white pepper 1/2 tsp. onion powder 4 lg. tomatoes 1 tbsp. olive oil Core and halve tomatoes. Squeeze gently to remove seeds and juice. Place tomatoes, cut side up, in a small baking dish. Drizzle with olive oil. Bake, uncovered, in a 400 degree oven for 10 minutes. Combine remaining ingredients, sprinkle over tomatoes and continue baking for 15 minutes more or until tomatoes are soft throughout. Makes 4 servings. |
