TOMATOES A LA PROVENCAL 
6 firm tomatoes
1/4 lb. pork sausage
2 c. plain bread crumbs
1/2 c. chopped parsley
1 tsp. basil
1 lg. clove garlic, minced
1/2 c. olive oil
Salt & pepper

Cut tomatoes in half, scoop out seeds and sprinkle with salt. Turn upside down to drain. Fry sausage, drain and crumble. In a bowl, mix together crumbled sausage, bread crumbs, parsley, basil, garlic, olive oil, salt and pepper. Stuff into tomatoes. Bake in 375 degree oven for 25 minutes.
