BAKED ESCAROLE SUPREME 
1 c. Jiffy or Bisquick mix
1/4 c. milk
2 eggs
1/4 c. onions, finely chopped
3/4 to 1 lb. escarole, cooked, drained and chopped
1/2 c. grated parmesan cheese
1/4 lb. sharp cheddar cheese, cut in 1/2 in. cubes
3/4 lb. creamed cottage cheese
1/2 tsp. salt
1 clove garlic, crushed
2 eggs

Grease a 10 x 8-inch baking dish. Mix Jiffy or Bisquick mix with milk, eggs and onions. Mix well and spread in baking dish. Mix rest of ingredients and spoon evenly over the batter in dish. Bake in 375 degree oven, 30 minutes or until set. Let stand 5 minutes before cutting.

This is delicious served hot or cold!
