POTATOES RANCHERO 
1/4 c. butter
1/4 c. milk
1/4 c. flour
1/8 tsp. pepper
1 tsp. salt
8 oz. cheese spread
6 c. potatoes, cooked & sliced
6 green onions, sliced
1/2 c. BBQ sauce
1 green pepper, sliced into rings

Make white sauce with butter, milk, flour, and seasonings. Add cheese and green onions. Layer potatoes and cheese sauce in casserole dish. Top with green peppers and BBQ sauce. Bake at 350 degrees for 30 minutes.
