CORN CASSEROLE 
2 pkgs. Ritz crackers
2 cans whole kernel corn
1 c. Velveeta cheese
1 lg. onion
1/2 c. mayonnaise
1 can cream of chicken soup
1 stick butter
1 can water chestnuts (chopped)

Crumble 1 package Ritz crackers. Place in 3 quart casserole dish. Mix corn, cheese, onion, mayonnaise, chicken soup, water chestnuts. Pour over Ritz crackers. Crumble other package Ritz crackers, spread over top. Melt stick butter, pour over top. Bake 325 degrees 35 minutes or until brown around edges.
