RED BEANS AND RICE 
1 lb. red kidney beans
1 onion, chopped
1 green pepper, chopped
1/4 tsp. red pepper
3 tbsp. cooking oil
1 lb. sausage (smoked)
2 bay leaves
1/2 tsp. thyme
Salt
Water

Soak beans overnight in refrigerator. Saute green pepper and onion in oil. Add beans, bay leaves, red pepper and thyme and pour enough water to cover beans. Simmer 2 hours.

Slice sausage in other pan. Cover sausage with water, boil for 3 minutes and drain. Add sausage to beans. Cook 2 more hours until beans are tender and soft. Add more hot water as needed. Serve over steamed rice. Famous dish in New Orleans.
