EASTERN SHORE SWEET POTATO
BISCUITS
 
2 c. flour
1/2 c. brown sugar
2 tbsp. baking powder
1 tsp. salt
1/2 c. butter
2 c. cooked, peeled and mashed sweet potatoes (3 lg.), can also use canned.
1/4 c. milk

Mix dry ingredients. Cut in butter. Gradually add sweet potato and milk. Turn out on lightly floured board. Knead briefly. Cut with biscuit cutter 1/2 inch thick. Bake 14 minutes at 450 degrees.

Great recipe but as with most they don't tell you if you should use a convection oven or conventional or does it really matter? Which one would you recommend?

Rob, always assume conventional. And normally, when you do convection, your oven intelligently adjusts the temperature you enter to compensate for the difference.
