SWEET POTATO BISCUITS 
1 1/2 c. all purpose flour
3/4 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. salt
6 tbsp. butter
1 1/2 c. cooked mashed sweet potatoes
1/3 c. buttermilk

Combine dry ingredients in a bowl, mixing well. Cut in butter until mixture resembles coarse crumbs. Combine the sweet potatoes with the buttermilk. Stir into the dry ingredients, blending to make a soft dough. Turn out onto lightly floured surface. Knead 4 or 5 times or just enough to form into a ball. Roll dough to about 1/3 inch thickness. Cut into 2 inch rounds with biscuit cutter dipped in flour. Place on lightly oiled baking sheet. Bake at 425 degrees for about 15 minutes or until puffy and lightly browned.
