SOUTH LOUISIANA RED BEANS & RICE 
1 lb. red kidney beans
Ham bone with some meat on
1 lb. pepperoni or Portuguese sausage, sliced
1 bay leaf
Dash of red pepper
1 lg. onion, chopped
1 clove garlic, chopped

Wash beans and soak in cold water overnight. Cook sausage, onions and garlic until brown. Add beans and water, ham bone and more water if needed, to cover beans and ham bone. Add bay leaf and red pepper. Cook slowly for several hours. Serve over rice or with cornbread. Serves 8.
