BAKED RICE CASSEROLE 
1 c. long grain rice
1 can beef consomme soup
1-2 soup cans water
1 sm. jar mushrooms, optional
1 sm. onion, diced & sauteed in butter
1/2 c. butter

Melt 1/2 cup butter. Add to other ingredients and stir all together. Pour into a 1 1/2 quart casserole dish. Bake at 350 degrees for 50 minutes to 1 hour, or until rice is lightly browned on top.
