ZUCCHINI BREAD 
2 c. sugar
3 c. grated zucchini (do not peel)
3 eggs
1 c. cooking oil
2 tsp. vanilla
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. raisins
1 1/2 c. nuts, chopped
1 1/2 c. coconut
1 (8 oz.) can crushed pineapple, drained

Mix together sugar and eggs until creamy. Add oil and vanilla and mix. Add all dry ingredients. Add zucchini and mix well. Add raisins, nuts, coconut and pineapple. Bake in 2 greased 9 x 5 inch loaf pans at 350 degrees for 1 hour. Can be frozen and served later.
