GROUND NUT CHICKEN 
1 chicken or pork chops
1 tbsp. ground ginger
1 green chili pepper, peeled and seeded
1/2 c. chopped onion
1 tbsp. salt
3 med. tomatoes, peeled
1 clove garlic
1/2 peanut butter
1 c. water or tomato juice

Rub chicken with ginger and brown in frying pan. Remove and add balance of ingredients. Return to pot; simmer 45-60 minutes or until tender. Serve over rice, garnish with pineapple chunks or avocado slices.
