BAKED FISH 
1 lb. fillet of sole, cod or haddock
1/2 c. sour cream
1/2 c. mayonnaise
1/2 c. grated Parmesan cheese
Paprika

Arrange fish in single layer in greased shallow baking dish. Over fish spread mixture of sour cream, mayonnaise and cheese. Sprinkle with paprika. Bake at 450 degrees for 10-12 minutes until fish flakes when tested with a fork. Serve with lemon wedge.

This is a quick and easy way to coat your fillets to keep them moist while they are baking. I added lemon juice, and used it with fresh halibut, which tends to be on the dry side. It came out moist and delicious.
