APRICOT COFFEE CAKE 
1 c. sugar
1 c. cooking oil
4 eggs
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Beat eggs well. Add sugar and oil. Then add remaining ingredients. Spread 1/2 batter in floured 9 x 12 inch pan. Cover with 1 can apricot pie filling. Spread remaining batter over pie filling. Sprinkle sugar and cinnamon over top. Bake 30 minutes at 350 degrees. Drizzle powdered sugar icing over top.
