SAUSAGE WITH BEANS | |
1 lb. Italian sausage (sweet or hot) 2 tbsp. olive oil 1 1/2 tbsp. tomato paste 1/4 tsp. salt 1/8 tsp. pepper 4 c. boiled kidney beans 1/2 c. water Prick sausage with needle and place in frying pan with enough cold water to cover. Cook over moderate fire until water evaporates, then cook 30 minutes longer, allowing sausage to brown. Remove from pan and keep warm. Add oil to fat in pan, add tomato paste, water, salt and pepper and cook 10 minutes. Add sausage and cook 30 minutes more. Place beans on bottom of serving dish and place sausage and sauce over them. |
