CHICKEN OR BEEF ENCHILADAS | |
1 pkg. 6 inch flour tortillas 1/2 c. shredded Cheddar cheese 1 1/2 c. shredded Jalapeno Monterey Jack cheese 1 c. sour cream Garlic salt to taste 1/2 c. chopped onions 1 can chopped green chilies 1 lb. ground chuck or chicken 1 lg. can tomato sauce 1/4 tsp. cumin 1 can enchilada sauce Heat oven to 350 degrees. Mix 1 cup Cheddar cheese, 1 cup Monterey Jack, sour cream, onion, and garlic salt. Brown meat with 1/4 teaspoon cumin. Add 1/2 meat mixture to cheese mixture. Spoon 1/4 cup down center of tortilla. Roll and place in ungreased baking dish. Mix tomato sauce, chilies, rest of meat and sauce. Spoon over top of enchiladas. Sprinkle with rest of cheese. Bake 20-30 minutes until bubbly and cheese melts. |
