COUNTRY BISCUITS 
3 to 4 c. plain flour
1 tbsp. sugar
1 1/2 tsp. salt
2 tsp. baking powder
1 pkg. dry yeast
1 c. milk
1/2 c. water
2/3 c. shortening

Mix 1 1/4 cups of flour, sugar, salt, baking powder and yeast. Combine milk, water, shortening in a saucepan until warm; shortening does not have to melt. Add warmed liquid to dry ingredients and beat 2 minutes on medium speed of electric mixer. Add 1/2 cup flour and beat on high speed of electric mixer. Add 1/2 cup of flour and beat on high speed of electric mixer for 2 more minutes. Stir dough out onto a lightly floured board and knead about 20 to 25 minutes and form a round ball.

Roll dough out to 1/2 inch thickness. Using a biscuit cutter or juice glass, cut dough and arrange in three 8 or 9-inch round pans. Cover with a clean cloth and let rise in a warm place, about 1 hour. Bake in a 400 degree oven about 20 minutes. Remove from pan immediately. Serves 3 dozen.
